This recipe uses our All-Purpose Baking Mix coupled with cornmeal, green chiles, and corn to give you a cornbread muffin with Tex-Mex flavors. It is definitely a taste of country home charm and a recipe that you can feel good about feeding your family because it is packed with wholesomeness.
2 cup Texas Pure All-Purpose Baking Mix
½ cup yellow cornmeal
½ cup diced green chiles
½ cup whole kernel corn
1 tsp black pepper
2 tsp granulated onion powder
1 Tbsp. minced garlic
½ cup milk
1/4 cup oil
In a 2-quart sized bowl, combine the baking mix and cornmeal. Add all remaining ingredients.
Divide between 12 well-oiled muffin tins. Pre-heat oven to 375 degrees. Bake 18-22 minutes until golden brown.
