Love You Pops...Cookie Pops for Dad

"Dad is amazing." We could just stop this post with that sentence and anyone who has been influenced by a good, strong, kind, hard working man would agree. Do you have one amazing Dad in your life? The first amber rays of warm sunlight illuminate his field as he hoists his son onto his shoulder. He is a giant of a man with a heart of gold. Generations before him have followed the American dream. A dream that is fueled by the love of country and marked by integrity. You now hold all this in your hands. Texas’ Own Perfect Lemon Sugar Cookies

1 cup butter, softened 2 cups sugar 3 large eggs 1 Tbsp. lemon zest, plus juice of one lemon 2 tsp. vanilla 4 cups Texas Pure Milling All Purpose Flour 1 tsp. baking soda 1/2 tsp. salt

Directions:

  • Cream butter and sugar.

  • Add eggs, lemon, juice and vanilla. Mix until creamy.

  • Add sifted dry ingredients: salt, soda, and flour.

  • Roll into balls and flatten with bottom of sugar coated glass or your hand.

  • Bake at 350° just until the edges start turning color 7-10 minutes. Time will vary depending on how large and thick you made your cookies. It is important not to over bake if you want the texture to remain chewy and soft.

For Cookie Pops: Insert a Popsicle stick into the baked cookie. Frost. Decorate as desired with your favorite frosting and sprinkles.
