Perfect Stove-top Homestead Chicken & Dumplings


Summer is here, and that means fast and simple dinners to cook without heating up the whole house with the oven. This is a rich and hearty Texas-style chicken and dumplings using our Texas Pure Milling 7-grain Baking Mix. We use convenient Original Rotisserie Chicken from the H-E-B deli to make it even more simple. This is a quick and easy recipe that anyone can make, just remember to lower the temperature on the stove to very low once you add the dumplin' batter. This will ensure that the stew doesn't burn on the bottom of the pan.

Perfect Stove-top Homestead Chicken and Dumplings

Chicken Stew base:

¼ cup olive oil or bacon grease

1 cup onion, chopped

1 cup celery, chopped

1 cup carrot, sliced

¼ cup Texas Pure Milling All Purpose Flour

3 cups low sodium chicken stock

1 lb Original H-E-B Rotisserie chicken, skinned and chopped

7 grain dumplings:

1 ¼ cup Texas Pure Milling 7-grain Baking Mix

2 large eggs

3T olive oil or melted butter

Directions:

  • In a 4 quart Dutch oven with a lid, heat the oil over medium-high heat. Add the onion, celery, and carrot. Sauté until tender, about 5 minutes. Add the Texas Pure Milling All Purpose Flour. Stir and cook over medium heat for 3-4 minutes.

  • Add chicken stock and chicken. Simmer 5 minutes.

  • While the stew base is simmering, combine all the ingredients for the dumplings, just until baking mix is moistened.

  • Drop dumpling batter by rounded Tablespoon into the hot chicken stew base, just on the surface. It should make about 12 medium dumplings or 20 small. Reduce heat to low and cover pot.

  • Simmer on low 17-20 minutes until dumplings are fluffy and cooked completely. Garnish with fresh herbs like rosemary, sage and thyme. Serve warm.
