Savory Breakfast Foccacia

Focaccia is a savory Italian flat bread, similar to pizza but without the traditional tomato sauce. In this recipe, we're sharing our favorite breakfast bread. Technically, it could be served with any meal, but it lends itself to be a particularly wonderful addition to breakfast when accompanied by a savory cheese omelet. The bread comes together rather quickly, since the dough doesn't need to raise more than a 40 minutes!
Savory Breakfast Focaccia
Crust:
6 cups Texas Pure Milling Bread flour 2 1/2 cups water 1 Tbsp. yeast 1 Tbsp. salt 1/3 cup olive oil
Toppings:
1/2 cup high quality olive oil
2 Tbsp. minced garlic
1 tsp fresh cracked pepper
1 cup thin sliced Roma tomatoes
1 cup Parmesan cheese, shredded
½ cup bacon crumbles (optional)
1 bell pepper, minced
2 Tbsp. minced fresh Italian Herbs (rosemary, basil, marjoram, parsley)
Directions:
Combine all crust ingredients in a mixer and knead 5 minutes. Let dough rest 10 minutes.
Form into 12-14 inch rectangular crusts placed on a well oiled sheet pan or stone. Allow to raise an additional 30 minutes.
Combine the olive oil, garlic and pepper in a small bowl. Spread olive oil mixture over the crust, leaving a 1 inch edge all around. Top with sliced tomatoes, Parmesan, bacon, bell peppers, and herbs.
Bake at 425° for 25-30 minutes. Serve hot. Refrigerate leftovers.
