Sweet whole grain muffins are a hearty and welcome addition to any breakfast table. Here's one or our basic favorite recipes that makes fantastic muffins. Enjoy!
7-Grain Sweet Muffins
2 cups Texas Pure Milling 7-grain Baking Mix
1/2 cup sugar
¾ cup milk
1 tsp vanilla
½ cup fresh berries or dried fruit of your choice (optional)
Directions: Preheat oven to 400°. In a large bowl, combine baking mix and sugar. In a small bowl combine the milk, egg and vanilla. Pour the wet mixture over the dry mixture and combine until a smooth batter is created. Add fruit if desired. Line a standard size muffin pan with 6 muffin liners and lightly mist the pan with a non-stick spray. Scoop muffin batter into muffin pan divided evenly between 6 muffins. Bake 20-25 minutes until golden brown and muffins spring slightly when touched.
