Cranberry Orange Pecan Oatmeal Cookies

These hearty full of whole grain cookies are great for after school snacks or a quick grab-n-go breakfast. We use our 7-Grain and Seed Baking Mix as the base for this cookie. They have just the right amount of spice to compliment the orange and cranberry as well. Nuts are optional, but add a delicate crunch to the cookies. Bake them for the holidays or any day of the year.

 

Cranberry Orange Pecan Oatmeal Cookies
½ cup butter, softened
1 cup brown sugar
1 egg
1 Tbsp. vanilla
2 tsp. orange zest
1 cup Texas Pure Milling 7 Grain and Seed Baking Mix
2 cups rolled oats

1 tsp. cinnamon
1 cup dried cranberries
1 cup chopped pecans

 

Directions: Wash and sanitize all works surfaces, hands and utensils. Preheat oven to 375°F.  In a medium bowl, cream together the butter and brown sugar. Add the egg, vanilla and orange zest. Add remaining ingredients and stir well.  Drop by rounded Tablespoon 1 inch apart on a parchment lined baking sheet.

Bake 12-15 minutes until golden brown. Yield approx. 3 dozen cookies.
