Turkey & 7-Grain Dumplings

It's only been a couple of days since Thanksgiving, and we bet there are still some leftovers in the fridge, right? Here's a delicious and simple way to use the gravy and turkey for a warm fast dinner. Turkey and dumplings is a family favorite! We make it simple when the dumplings are made using our 7 grain and seed all purpose baking mix.
Turkey and 7-grain Dumplings
Turkey Stew base:
¼ cup olive oil or bacon grease
1 cup onion, chopped
1 cup celery, chopped
1 cup carrot, sliced
3 cups turkey gravy (24 oz. jar)
1 lb. turkey breast and thigh meat, chopped
7 grain dumplings:
1 ¼ cup Texas Pure Milling 7-grain Baking Mix
2 large eggs
3T olive oil or melted butter
Chopped fresh herbs (like rosemary, thyme and sage)
Cracked red pepper, to taste
Directions:
In a 4-quart Dutch oven with a lid, heat the oil over medium-high heat. Add the onion, celery, and carrot. Sauté until tender, about 5 minutes. Add the turkey gravy and turkey meat. Stir and cook over medium heat for 3-4 minutes.
While the stew base is simmering, combine all the ingredients for the dumplings, just until baking mix is moistened.
Drop dumpling batter by rounded Tablespoon into the hot chicken stew base, just on the surface. It should make about 12 medium dumplings or 20 small. Reduce heat to low and cover pot.
Simmer on low 17-20 minutes until dumplings are fluffy and cooked completely.
Garnish with fresh herbs like rosemary, sage and thyme. Sprinkle with red pepper flakes. Serve warm.
