Easy Coconut Cherry Pie Squares


Are you looking for a simple and killer-delicious dessert that comes together in just minutes? These Coconut Cherry Pie Squares are so easy to make and so luscious to eat that it almost feels wrong! The secret is having the perfect combination of butter, sugar, and organic All-Purpose Flour to allow the coconut to hold together. It's coconut harmony...buttery, luscious, cherry shortbread coconut harmony.

We love the combination of cherry and coconut, but this recipe also works with blueberry, raspberry, or lemon pie filling. Always allow the bars to cool completely before cutting, even if the intoxicating smell of buttery coconut goodness seems like too much to bear.

Easy Coconut Cherry Pie Squares

1 cup sugar

1 cup salted butter

3 1/2 cups Texas Pure Milling Organic All-purpose Flour

14-oz. can sweetened flake coconut

1 21-ounce can Premium Cherry Pie Filling

1-15 oz. can cherries, drained

Directions:

  • Preheat oven to 375°F.

  • Cream sugar and butter. Sift flour and salt together and then add to creamed mixture. Mix in coconut.

  • Pack 1/2 of this mixture into a greased 9x13 inch baking pan.

  • Combine the cherry pie filling and cherries.

  • Spread cherry pie filling mixture on top of the coconut mixture in the pan.

  • Put remaining crumb mixture on top of pie filling. Pat down firmly.

  • Bake for 25 to 30 minutes. When cool, cut into 16-squares.
