Best Ever From Scratch Yellow Cupcakes


Anyone can make a cake from a box, but it takes something special to make cake from scratch that actually turns out delicious! Every baker just needs a really great cake recipe that works every time and this is our favorite! It's a scratch yellow cupcake recipe that gives you a fine tender crumb and delicious flavor. The addition of the cornstarch is the secret! It makes the cake very smooth and light. As a bonus, we've also added a fluffy buttercream frosting to these that is just a few ingredients and comes together quickly.


Texas Pure Milling Best Ever Yellow Cupcakes

2 ½ cup Texas Pure Milling All Purpose flour 3 Tbsp. Cornstarch 1 Tbsp. baking powder ½ tsp. salt 1 ½ cups granulated sugar 3/4 cup butter 3 eggs 2 tsp vanilla 1 cup milk

Frosting 3 cups powdered sugar ½ cup butter, softened 2 tsp. vanilla 3-4 Tbsp. hot water

Directions:

  • Preheat oven to 350°F. Line 24 muffin cups with paper liners. Wash and sanitize all work surfaces, hands and utensils before handling raw flour. In a small bowl, stir together flour, cornstarch, baking powder and salt.

  • Beat sugar and butter in large bowl until light and fluffy. Add eggs, one at a time, beating well after each addition; add vanilla. Add flour mixture and milk alternately, beginning and ending with flour mixture, mixing on low speed.

  • Divide batter evenly into prepared cups.

  • Wash and sanitize all work surfaces, hands and utensils after handling raw flour and batter. Bake 25 to 30 minutes, or until toothpick inserted in center comes out clean (at least 170°F). Cool in pan 10 minutes; remove from baking pan to cooling rack. Cool completely.

  • Frosting: In large bowl, beat remaining Frosting ingredients with electric mixer on low speed until creamy.
