Peppermint Fudge Brownies

It's time for a winter wonderland classic. Peppermint brownies! These fudge textured brownies are drenched in a peppermint truffle frosting that is called ganache and then sprinkled with crushed candy canes. You are sure to love them!
Peppermint Fudge Brownies
1/2 cup Butter, softened
2 cups Brown Sugar
1 ½ tsp Vanilla
4 Eggs
1 cup Texas Pure Milling Organic All Purpose Flour
½ cup baking cocoa
1 tsp. Sea Salt
¼ tsp Baking powder
½ cup crushed Candy canes
Directions:
Preheat oven to 325 degrees. Cream the butter, brown sugar, eggs, and vanilla until light. Add the flour, cocoa, and salt, mixing 2 minutes.
Pour into a lightly greased bar pan (at least 12 inch by 9 inch) Bake 30-35 minutes--slightly under-cooked is better than overdone and dry.
Cover with Peppermint ganache.
Peppermint Truffle Ganache
16 ounces Nestle Toll House Semi-Sweet Chocolate chips
1 cup Heavy Cream Heavy Cream
½ tsp. Peppermint extract
Directions:
Boil cream with the peppermint extract.
Place the chocolate chips in a metal bowl and pour hot cream mixture over the chocolate. Stir with a wire whisk until smooth.
Pour over brownies and cool. Decorate with crushed candy canes if desired.
