Peanut Butter Sandwich Cookies

Sandwich cookies are an all-American favorite and these peanut butter sandwich cookies with are filled with a creamy buttery frosting. They are perfect for an after school snack or packed in a lunchbox as an extra special treat. The cookies are tender and and fudgy with just the right amount of chew. These will be a family favorite for years to come.
Peanut Butter Sandwich Cookies
Cookies:
1 cup creamy peanut butter
1 cup butter softened
1 ¼ cup sugar
¾ cup packed brown sugar
3 large eggs
2 tsp. vanilla extract
3 cups Texas Pure Milling All-purpose Flour
1 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
Filling:
¼ cup creamy peanut butter
¼ cup butter, softened
3 cups confectioners' sugar
2 tsp. vanilla extract
1/3 cup milk
Directions:
In a large bowl, cream the butter, peanut butter and sugars until light and fluffy, about 4 minutes. Beat in eggs and vanilla. Combine the flour, baking soda, baking powder and salt; add to creamed mixture and mix well.
Shape into 1-in. balls and place 2 in. apart on ungreased baking sheets. Flatten to 3/8-in. thickness with fork. Bake at 375° for 7-8 minutes or until golden. Remove to wire racks to cool.
For filling: In a large bowl, beat the peanut butter, butter, confectioners' sugar, vanilla and milk to achieve spreading consistency. Spread on half of the cookies and top each with another cookie.
